The traditions of the Dolomites and their essential beauty meet modern techniques. Each dish is born from the natural balance of flavour intensity and delicacy, memory and innovation.
Homemade pasta and desserts, selected meats, mountain dairy products, local herbs tell the story of the people who live authentic and sincere lives in the mountains.

Personally curated by Aldo, the wine list reflects the same attention devoted to the cuisine: local labels, independent producers, Italian wineries that enhance the local territory and character.

The Michelin Guide
In recent years, many guests have asked us what it means to be featured in the MICHELIN Guide Italy.
It is an important recognition for us, that rewards the daily care, consistency, and attention we devote to our cuisine and hospitality.
AceroRosso is featured in the MICHELIN Guide since 2024 as well as in the 2025 and 2026 editions.
This continuity reflects the value of our work over time, without changes in philosophy or approach.
However, we would like to clarify that AceroRosso is not a Michelin-starred restaurant.
We have been selected for the overall quality of the experience, not for a change in style or pricing policy.
Our cuisine remains faithful to its principles: local ingredients, seasonality, carefully prepared and honest dishes, all in an environment that aims to make each guest feel at home.
The MICHELIN Guide found us this way — and this is how we want to continue to be.
